Fiona’s thoughts…

‘During my trip to the food Allergy show this year I got chatting to the guys at Pura. I’ve talked a few times on my blog about incorporating a higher amount of protein into my diet for health reasons. Pura introduced me to their gluten and dairy free protein powder – Pura Bio Protein Isolate – check it out by clicking here. This protein powder is perfect to bake with so I thought I would use it to make some homemade gluten and dairy free protein bars. ‘

Ingredients

  • 135g gluten free oats
  • 60g Pura BIO Protein Isolate
  • 2 tablespoons chai seeds
  • 1 teaspoon baking powder
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 50ml honey or maple syrup
  • 1 egg, beaten
  • 1 medium banana, mashed
  • 60g sultanas
  • 130ml almond milk

Method

  1. Preheat the oven to 180 oC
  2. Line a 6″ by 6″ traybake tin with tinfoil leaving an overlap so you can easily left the bars out of the tin when they are baked
  3. In a large bowl stir together the oats, protein powder, chai seeds, baking powder, ginger and cinnamon
  4. Add in the honey/maple syrup, egg, banana, sultanas and milk
  5. Stir until well combined
  6. Pour into the traybake tin
  7. I sprinkled a few extra oats on top of the bars
  8. Bake in the oven for 25 minutes
  9. Remove from the oven and leave to cool in the tin for about 30 minutes
  10. Remove from the tin and allow to cool completely
  11. Cut into 9 bars
